Breakfast Toasties
Breakfast Toasties – As seen on Good Chef, Bad Chef

Serves: 2
Ingredients:
2 black rice toasties
Bacon
1 tbsp butter
2 eggs
Salsa
¼ red onion, finely diced
½ jalapeno, finely diced
½ cup cherry tomatoes, quartered
½ tomato, diced
2 baby cucumbers, diced
½ avocado, diced
1 lemon, juice
Salt & pepper
1 tbsp extra virgin olive oil
30g goats cheese, crumbled
Method:
Toast black rice toasties for 2-3 minutes or to your liking.
Fry bacon and eggs in oil and butter.
Mix all of the ingredients for the salsa together.
Pile the eggs and crispy bacon on the black rice toasties, pile the salsa on top and crumble over goats cheese.
