Pizza in a Flash by Michelle Bridges

½ Onion, halved and thinly sliced
½ Teaspoon Honey
1 Zero Foods Black Rice Pizza Base
2 Tablespoons Passata (40g)
1 ½ Teaspoon Pesto
30g Reduced Fat Mozzarella, grated
½ Medium Zucchini, sliced
½ Medium Tomato, sliced
1g Basil Leaves, roughly chopped
Preheat oven to 220°C. Line a baking tray with non-stick baking paper and place Pizza base onto tray.
Slice onion and fry in a pan with a little olive oil. Once translucent, add honey and caramelise for further 2 minutes.
Spread passata over pizza base. Top with pesto then 20g of the mozzarella cheese. Layer the tomato, zucchini, onion and basil. Top with remaining mozzarella and bake in oven for 20 minutes, or until the cheese is golden and the base crisp. Serve with spinach if desired.
