Cook onion in a fry pan with a little oil for 5 minutes, or until soft and translucent.
Place one toastie on a plate, and layer with cooked onion, roast turkey, turkey stuffing, cranberry sauce, pickled beetroot, brie, coleslaw, pecans and thyme. Place second toastie on top to form a sandwich.
Place sandwich in toastie maker and press firmly. Toast for 5 to 10 minutes, until cheese is melted and the toasties are crisp.
