- Onion – One whole
- Mushroom – 50g
- Spinach – 100g
- Tomato Passata – 250g
- Feta cheese
- Salt & Pepper
- 1 cup of Zero organic brown rice
- Parboil brown rice – set aside
- Sauté brown onion and add chopped mushrooms until softened
- Add the parboiled rice, spinach, mint, parsley and salt and pepper
- Stir in tomato passata with water and allow to simmer
- Once the rice is completely cooked, remove from stove top and prepare to serve!
- Don’t forget to top the Spanakorizo with feta! Yum!
